Over-the-road hauls can be an odyssey for truck drivers. Over-the-road meals don’t have to be, though.

We shared some easy and delicious on-the-go meals in our Dining on the Dash article a little while ago. Since that was just the tip of the iceberg as far as trucking-friendly meals goes, though, we’ve decided to do it again. Here’s some more healthy and filling meals you can prepare right in your rig. Give your wallet (and your digestive system) a break from fast food, and try these fast and tasty options below.

OTR Pasta:

Fancy up an instant pasta bowl to create a delicious (and healthier) supper. While you wait for your pasta to be ready, slice up vegetables like zucchini and cherry tomatoes, then mix in once the pasta is done. Add some pre-sliced deli chicken, and your dinner is all set. Sprinkle some grated parmesan on top if you like, and dig in.

Top Gear Charcuterie:

Who remembers Lunchables from their childhood? Few things were better than opening your Pokémon lunch box and finding that prepackaged box of sliced meats and cheeses. Get that feeling all over again by slicing up salami, cold cuts, your favorite cheese, olives, and then bread or crackers. Put them all in a bento box-style container (or any sealable container will do). You’ll have a nostalgic lunch that’s also ready when you are.

All-Day Bacon and Eggs:

There’s a reason this has been a breakfast staple for decades: it’s fast, easy and packed full of protein. But why wait for tomorrow morning before you indulge? Using a hotplate, fry up eggs and bacon just the way you like them. Top them off with some pepper, spices or hot sauce (or all three), butter some toast and enjoy.

1000-Horsepower Smoothies:

Consider investing in a single-serve blender for your rig. It will open up a world of mouth-watering (and nutritious) snack and meal options. Once you do, all you’ll need is frozen fruit, yogurt, water or ice and a scoop of protein powder to make a filling, refreshing snack that will keep you going for hours.

Continental Breakfast to Go:

Before you hit the road, chow down on a meal that’s right from the Howard Johnson.  Slice a bagel and slather with your choice of cream cheese, slice an apple or banana, and sprinkle some granola on top of a single-serve container of yogurt. You can switch out the bagel for a bran muffin, or swap the yogurt for sliced cheese. Then pretend you’re lounging in a hotel bed while you scarf it down.

Plan-Ahead Road Trip Lasagna:

If there’s a meal you love that needs a full-sized oven to prepare it, a little planning ahead will let you enjoy it while on the road. Bake a full-size lasagna (or stir fry, or any meal that reheats well in a microwave), then divide it up in to single-serving portions. Once you’re on the road, all you’ll need to do is pop a serving in the microwave at dinnertime, and you can eat like you have a full-sized kitchen at your disposal.

Long-Haul Soup:

Soups and stews are another meal that can be made ahead of time in large batches, parceled out in to individual servings, and freezes well, too. Plus, soup is a low-stress meal that you can let simmer for hours while you relax on an off-day. Be sure to choose a soup with plenty of protein and veggies. Then when you hit the road, just give it a few hours to thaw before reheating it in a microwave-safe bowl.

Bobtail Seafood Salad:

Bring a taste of the coast to the southwest with the help of canned shrimp or fish.  Open a can of seafood (make sure you have a can opener in your rig), drain and mix with mayonnaise or olive oil, then mix in your choice of seasonings and spices. Chop up some green pepper and onion, add some chili flakes if you like, mix it in, and voila: You’ve got a tastebud-tempting meal. For a hearty supper, spread your salad on a Kaiser roll (or other crusty bun), then add some lettuce and tomato to create a both-hands-needed seafood sandwich.
